Ingredients

Steps
- Place 1 cup of sugar in an iron skillet. Let it melt slowly over low heat, stirring while it melts.
- Meanwhile, combine the remaining 2 cups of sugar with the cream and milk.
- Pour the cream-sugar mixture into the melted (caramelized) sugar. Note: the mixture will become hard at first — this is expected.
- Let cook slowly until the caramelized sugar dissolves completely.
- Continue cooking to the firm ball stage (approximately 245–250 °F / 118–121 °C on a candy thermometer).
- Remove from heat. Add the vanilla, butter, and nuts.
- Beat as long as you can (until the fudge thickens and loses its gloss).
- Pour into a greased pan. Cut into squares once set.
