Candy - Sour Cream

Ingredients

  • 1½ cups sugar
  • ⅔ cup dairy sour cream
  • ½ cup butter or margarine
  • 8 ounces white confectioners' coating, finely chopped
  • 1 teaspoon vanilla
  • ¾ cup broken walnuts, toasted

Steps

  1. Butter an 8×8×2-inch baking pan and set aside.
  2. Butter the sides of a heavy 2-quart saucepan.
  3. In the prepared saucepan, combine the sugar, sour cream, and butter or margarine.
  4. Cook over medium-high heat to boiling, stirring constantly with a wooden spoon. Clip a candy thermometer to the side of the pan.
  5. Reduce heat to medium. Continue cooking to 238°F (soft-ball stage), stirring occasionally. The mixture should boil at a moderate, steady rate over the entire surface.
  6. Remove from heat. Stir in the confectioners' coating and vanilla, stirring until the coating is melted.
  7. Add the walnuts; stir until smooth and creamy and the mixture starts to thicken (about 3 minutes).
  8. Pour into the prepared pan. Score the candy while warm into 1-inch pieces.
  9. Cool until firm, then cut into pieces. Store tightly covered.
