Ingredients

  • 10 to 12 medium-size cucumbers
  • 8 cups sugar
  • 2 tablespoons mixed pickling spice (tied in a bag)
  • 5 teaspoons salt
  • 4 cups cider vinegar (medium strength)

Steps

  1. Cover whole cucumbers with boiling water. Allow to stand in the water until the next morning.
  2. Drain. Repeat this procedure (covering with fresh boiling water, soaking overnight, draining) for 3 days total.
  3. On the 5th day, drain and slice the cucumbers.
  4. Combine sugar, salt, spice bag, and cider vinegar. Bring to a boil.
  5. Pour the hot brine over the sliced cucumbers. Let stand 3 days.
  6. On the 3rd day, bring the cucumbers and brine to a boil.
  7. Seal in hot sterilized jars. Makes about 7 pints.
