Irish Soda Bread

Ingredients
- 4 cups flour
- 1¼ cups sugar
- 4 teaspoons baking powder
- ¼ teaspoon baking soda
- 2 teaspoons cinnamon
- 2 teaspoons nutmeg
- 1¼ cups raisins
- ¾ cup milk
- 3 large eggs
Steps
- Lightly grease 2 cookie sheets.
- Mix all ingredients except milk and eggs together in a bowl.
- Whisk eggs and milk together in a 2-cup measure.
- Add the egg-milk mixture to the flour mixture and combine. (The dough can be covered and kept overnight at this stage if desired.)
- Turn dough out onto a floured surface and cut into 6 pieces.
- Pat each piece into a round loaf.
- Arrange 3 loaves 3 inches apart on each prepared cookie sheet.
- With a sharp knife, cut a cross on the top of each loaf.
- Bake 1 cookie sheet at a time at 350° for 30–35 minutes, until loaves are lightly browned and a pick inserted near the center comes out clean.
