Ingredients
- 2¾–3¼ cups all-purpose flour, divided
- 1 package yeast
- 1 tablespoon sugar
- 1 teaspoon salt
- 1¼ cups warm water
- 2 tablespoons shortening
- cornmeal, for dusting
Steps
- Combine the yeast, sugar, salt, and half of the flour in a large bowl.
- Add the warm water and shortening; stir to combine.
- Add the remaining flour gradually, mixing until the dough is firm.
- Knead the dough until smooth and elastic.
- Place the dough in a greased bowl and turn it to coat the top with grease.
- Cover and let rise for 60 minutes.
- Punch the dough down.
- Roll out the dough to about ¼-inch thickness. Cut with a round cutter.
- Dust the surface or griddle with cornmeal. Let the cut muffins rise for 30 minutes.
- Cook on a griddle for 8 minutes per side.
