Carmel Frosting

Ingredients
- ½ cup sugar (for caramelizing)
- 2½ cups sugar
- ¾ cup milk
- 1 egg
- Pinch of salt
- ½ cup butter, cut up
Steps
- Place ½ cup sugar in a heavy saucepan over medium heat. Cook, stirring, until the sugar melts and turns golden brown.
- In a bowl, combine 2½ cups sugar, ¾ cup milk, 1 egg, and a pinch of salt.
- Add ½ cup butter (cut into pieces) to the sugar-milk mixture, then pour the whole mixture into the saucepan with the caramelized sugar. (The mixture will be lumpy at first.)
- Cook, stirring frequently, until the mixture reaches the soft-ball stage (approximately 15–20 minutes).
- Remove from heat and cool for 5 minutes.
- Beat until the frosting reaches a spreadable consistency.
- Be sure the cake is completely cool before frosting.
