Ingredients
Cookie Dough
- 2 cups sugar
- 1 cup shortening
- 3/4 teaspoon milk *(noted alongside sugar & shortening — likely salt; see notes)*
- Nutmeg (amount not specified)
- 3 eggs (added 1 at a time, before combining wet and dry)
- 2½ cups flour, sifted together with:
- 2½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 cup milk
- Vanilla (amount not specified)
Filling
- 1 box raisins
- ½ cup sugar
- 3 heaping tablespoons flour
- 1 teaspoon vinegar
- 1 cup water
Steps
Cookie Dough
- Cream together the sugar, shortening, 3/4 tsp milk [possibly salt], and nutmeg.
- Before combining wet and dry ingredients, beat in 3 eggs, one at a time, into the creamed mixture.
- Sift together the flour, baking powder, and baking soda.
- Combine 1 cup milk and vanilla; add wet ingredients to the dry ingredients and mix until a dough forms.
- Roll dough out to no more than 3/16" thick and cut into rounds. Work in extra flour as you cut them if the dough is sticky.
Filling
- Make the filling: Combine raisins, sugar, flour, vinegar, and water in a saucepan. Boil together, stirring, until thick enough to spread. Cool completely.
- Spread about 1 tablespoon of filling on one cookie round and top with a second round to make a filled sandwich cookie.
- Baking temperature and time are not specified on the card.
