Ingredients

Frosting

  • 2 egg whites
  • ¾ cup Karo syrup (red label / light corn syrup)
  • ¼ cup sugar
  • ⅛ teaspoon salt
  • 1¼ teaspoons vanilla

For Filling (Lord Baltimore Cake Assembly)

  • ¼ cup chopped maraschino cherries (text cut off on card)
  • ¼ cup chopped pecans
  • ¼ cup chopped raisins

Steps

Frosting

  1. Combine egg whites, Karo syrup, sugar, and salt in the top of a double boiler.
  2. Place over rapidly boiling water; cook, beating constantly with a rotary beater, until the frosting stands in peaks.
  3. Remove from heat. Add vanilla, beating in well.
  4. Cool slightly.

For Filling (Lord Baltimore Cake Assembly)

  1. Place ⅓ of the frosting in a small bowl; add the remaining ingredients (chopped cherries, pecans, and raisins) and mix well.
  2. Spread this mixture between 2 (8- or 9-inch) layers of white cake.
  3. Spread the top and sides of the cake with the plain frosting.
  4. If desired, garnish the top with a circle of chopped fruits and nuts.

Sea Foam Frosting (Variant)

  1. Prepare frosting as directed above.
  2. Substitute Blue Label Karo (dark corn syrup) for Red Label, and brown sugar for white sugar.
  3. Omit fruit; use nuts for garnishing.
  4. Especially good for chocolate cake.
