Lora Baltimore Frosting

Ingredients
Frosting
- 2 egg whites
- ¾ cup Karo syrup (red label / light corn syrup)
- ¼ cup sugar
- ⅛ teaspoon salt
- 1¼ teaspoons vanilla
For Filling (Lord Baltimore Cake Assembly)
- ¼ cup chopped maraschino cherries (text cut off on card)
- ¼ cup chopped pecans
- ¼ cup chopped raisins
Steps
Frosting
- Combine egg whites, Karo syrup, sugar, and salt in the top of a double boiler.
- Place over rapidly boiling water; cook, beating constantly with a rotary beater, until the frosting stands in peaks.
- Remove from heat. Add vanilla, beating in well.
- Cool slightly.
For Filling (Lord Baltimore Cake Assembly)
- Place ⅓ of the frosting in a small bowl; add the remaining ingredients (chopped cherries, pecans, and raisins) and mix well.
- Spread this mixture between 2 (8- or 9-inch) layers of white cake.
- Spread the top and sides of the cake with the plain frosting.
- If desired, garnish the top with a circle of chopped fruits and nuts.
Sea Foam Frosting (Variant)
- Prepare frosting as directed above.
- Substitute Blue Label Karo (dark corn syrup) for Red Label, and brown sugar for white sugar.
- Omit fruit; use nuts for garnishing.
- Especially good for chocolate cake.
