Ingredients

Muffin Batter

  • 1 cup flour
  • ½ cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup butter or margarine
  • ⅓ cup pure maple syrup
  • ⅔ cup milk
  • 1 egg
  • ½ cup chopped walnuts

Sugar-Nut Topping

  • 2 tablespoons sugar
  • ¼ teaspoon cinnamon
  • 3 tablespoons finely chopped walnuts

Steps

Muffin Batter

  1. Combine all dry ingredients (flour, whole wheat flour, baking powder, salt, and cinnamon) except the walnuts.
  2. Add the maple syrup and milk to the dry ingredients, then beat in the egg.
  3. Stir the butter (melted) into the dry ingredient mixture; stir just to moisten.
  4. Stir in the chopped walnuts.

Sugar-Nut Topping

  1. Make the Sugar-Nut Topping: combine 2 tablespoons sugar with ¼ teaspoon cinnamon and 3 tablespoons finely chopped walnuts.
