Ingredients

Cake

  • 1 cup quick-cooking oatmeal
  • ¼ stick (2 tablespoons) margarine (oleo)
  • 1¼ cups boiling water
  • 2 eggs, well beaten
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1½ cups flour
  • 1 teaspoon baking soda
  • ¾ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt

Icing

  • 6 tablespoons melted margarine (oleo)
  • 1 cup brown sugar
  • ⅓ cup Carnation evaporated milk
  • ½ teaspoon vanilla
  • 1 cup coconut
  • ½ cup nut meats

Steps

Cake

  1. Combine the oatmeal, margarine, and boiling water; mix together and let cool.
  2. Once cooled, mix in the well-beaten eggs, white sugar, brown sugar, flour, baking soda, cinnamon, nutmeg, and salt.
  3. Grease a large pan and pour in the batter.
  4. Bake at 350°F for 30 minutes.
  5. Remove from oven and loosen the cake all the way around the sides.
  6. Make punctures all over the top of the cake.

Icing

  1. Make the icing: Cook together the melted margarine, brown sugar, evaporated milk, vanilla, coconut, and nut meats just enough to melt the sugar.
  2. Pour the icing over the punctured cake.
  3. Return to oven and bake 15 minutes more.
