Ingredients

Topping / Pan Base

  • ⅓ cup butter
  • 1 cup dark brown sugar
  • 2 tablespoons pineapple juice
  • 8 slices pineapple
  • 8 red cherries

Batter

  • 1½ cups flour
  • 3 teaspoons baking powder
  • ½ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • ¼ teaspoon almond extract
  • ½ cup milk
  • 3 tablespoons fat (melted)

Steps

Topping / Pan Base

  1. In a frying pan, heat slowly the butter, dark brown sugar, and pineapple juice together, stirring until combined.
  2. Add the pineapple slices and red cherries to the pan; arrange them in the pan bottom.

Batter

  1. In a bowl, combine the flour, baking powder, sugar, eggs, vanilla, almond extract, milk, and melted fat. Beat for 2 minutes.
  1. Pour the batter over the pineapple and cherry arrangement in the pan.
  2. Bake 35 minutes in a moderate oven (approximately 350°F).
