Chocolate Maple Cremes

Ingredients
- 2/3 cup white (corn) syrup
- 2 cups light brown sugar
- 6 tablespoons hot water
- 1 egg white
- Few grains salt
- 1 teaspoon maple flavoring (extract)
- 1½ cups chopped nuts
- 1 package (12 oz.) chocolate chips
- 4 ounces candy wax (paraffin)
Steps
- Combine white syrup, brown sugar, and hot water in a saucepan. Cook over low heat, stirring until sugar is dissolved.
- Raise heat and cook without stirring until the mixture reaches 238°F (thread stage).
- Beat egg white with salt until soft peaks form.
- Pour the hot syrup slowly over the beaten egg white, beating constantly.
- Add maple extract and continue beating until the mixture is stiff.
- Fold in chopped nuts.
- When the candy becomes too stiff to beat, pat it out into a lightly oiled pan.
- Chill overnight in the refrigerator.
- Cut the chilled candy into squares.
- In a double boiler, melt the candy wax and chocolate chips together.
- Remove from heat and dip each candy square into the chocolate-wax coating.
- Place dipped candies on waxed paper to set.
