Fried Doughnuts

Ingredients

  • ¾ cup milk
  • ¼ cup sugar
  • 2 teaspoons [illegible: salt?]
  • 4½ cups flour (divided)
  • ¼ cup melted shortening
  • 1 egg
  • 1 large yeast cake
  • ½ cup lukewarm water

Glaze

  • ½ cup boiling water
  • 1 cup confectioners' sugar

Steps

  1. Soften the yeast cake in the lukewarm water for 5 minutes.
  2. Pour the milk over the sugar and put in a bowl. Stir until completely dissolved and slightly cooled.
  3. Add 1 cup of flour and beat until smooth.
  4. Beat in the melted shortening, egg, softened yeast, and the remaining flour. Mix to a soft dough.
  5. Turn the dough out onto a floured board and knead 5–15 minutes until dough is smooth and satiny.
  6. Place in a lightly greased bowl and grease the top of the dough. Let rise until doubled, about 1½ hours.
  7. Roll dough to ½-inch thickness and cut into doughnuts. Let rise on a floured surface until light, 30–40 minutes.
  8. Fry in deep fat at 380°F until done.

Glaze

  1. Mix ½ cup boiling water with 1 cup confectioners' sugar well. Glaze doughnuts while still warm.
