Fried Doughnuts

Ingredients
- ¾ cup milk
- ¼ cup sugar
- 2 teaspoons [illegible: salt?]
- 4½ cups flour (divided)
- ¼ cup melted shortening
- 1 egg
- 1 large yeast cake
- ½ cup lukewarm water
Glaze
- ½ cup boiling water
- 1 cup confectioners' sugar
Steps
- Soften the yeast cake in the lukewarm water for 5 minutes.
- Pour the milk over the sugar and put in a bowl. Stir until completely dissolved and slightly cooled.
- Add 1 cup of flour and beat until smooth.
- Beat in the melted shortening, egg, softened yeast, and the remaining flour. Mix to a soft dough.
- Turn the dough out onto a floured board and knead 5–15 minutes until dough is smooth and satiny.
- Place in a lightly greased bowl and grease the top of the dough. Let rise until doubled, about 1½ hours.
- Roll dough to ½-inch thickness and cut into doughnuts. Let rise on a floured surface until light, 30–40 minutes.
- Fry in deep fat at 380°F until done.
Glaze
- Mix ½ cup boiling water with 1 cup confectioners' sugar well. Glaze doughnuts while still warm.
