Ingredients
- 1 cup Kellogg's All-Bran cereal (or 1 cup Bran Buds, or 2 cups Bran Flakes)
- ½ cup milk
- 1 cup regular (all-purpose) flour
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon ginger
- 1 cup brown sugar, firmly packed
- ½ cup soft margarine
- 2 eggs
- 1 teaspoon vanilla
- ½ cup chopped dry-roasted peanuts (writer's note: used roasted in-shell peanuts and added salt to mixture)
- 1 cup seedless raisins
- Vanilla frosting, for topping
- Additional chopped peanuts, for topping
Steps
- Preheat oven to 375 °F.
- Measure All-Bran into a small bowl. Add milk and let stand until all moisture is absorbed.
- Sift together flour, baking soda, cinnamon, nutmeg, and ginger. Set aside.
- Beat brown sugar and margarine together until fluffy.
- Add eggs, vanilla, and the All-Bran mixture to the creamed mixture. Beat well.
- Add the dry ingredients and stir to combine.
- Stir in the chopped peanuts and seedless raisins.
- Drop by level tablespoonfuls onto a greased baking sheet.
- Bake at 375 °F for about 12 minutes.
- Frost cooled cookies with vanilla frosting and sprinkle with additional chopped peanuts.
