Ingredients

  • 1 package (3 oz.) lemon Jell-O
  • 1 medium can (15–17 oz.) crushed pineapple (with juice)
  • 1 pound (2 cups) cottage cheese
  • ¼–½ cup small marshmallows
  • 1 cup heavy cream (whipped)
  • 1 cup boiling water

Steps

  1. Dissolve the lemon Jell-O in 1 cup of boiling water.
  2. Add the crushed pineapple and its juice, cottage cheese, and marshmallows. Stir to combine.
  3. Let the mixture chill in the refrigerator until somewhat thickened.
  4. Whip the heavy cream, then fold the whipped cream into the thickened Jell-O mixture.
  5. Chill until serving time.
