Ingredients
Muffin Batter
- 1 cup flour
- ½ cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- ½ teaspoon cinnamon
- ¼ cup butter or margarine
- ⅓ cup pure maple syrup
- ⅔ cup milk
- 1 egg
- ½ cup chopped walnuts
Sugar-Nut Topping
- 2 tablespoons sugar
- ¼ teaspoon cinnamon
- 3 tablespoons finely chopped walnuts
Steps
Muffin Batter
- Combine all dry ingredients (flour, whole wheat flour, baking powder, salt, and cinnamon) except the walnuts.
- Add the maple syrup and milk to the dry ingredients, then beat in the egg.
- Stir the butter (melted) into the dry ingredient mixture; stir just to moisten.
- Stir in the chopped walnuts.
Sugar-Nut Topping
- Make the Sugar-Nut Topping: combine 2 tablespoons sugar with ¼ teaspoon cinnamon and 3 tablespoons finely chopped walnuts.
- Fill muffin tins with batter and sprinkle the tops with the Sugar-Nut Topping.
- Bake at 375°F for 15–20 minutes.
