Ingredients

  • 2 cups sugar (plus extra for finishing)
  • 5 tablespoons oil *(handwritten margin note: ¼ cup)*
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder *(margin note suggests 3 eggs may be preferred over 2)*
  • 3 cups buttermilk
  • 2 eggs *(marginal correction suggests 3)*
  • Flour to roll *(quantity not specified — add enough to make a rollable dough)*
  • Nutmeg, to taste
  • Vanilla, to taste

Steps

  1. Combine sugar, oil, salt, baking soda, and baking powder in a large bowl.
  2. Beat in the eggs (2, or 3 per the marginal note).
  3. Stir in the buttermilk.
  4. Add nutmeg and vanilla as usual.
  5. Mix in enough flour to form a dough that can be rolled out.
  6. Roll out the dough and cut into doughnut shapes.
  7. Fry in hot oil until cooked through and golden.
  8. Drain on paper and roll or sprinkle with sugar while still warm.
