Ingredients

Cake

  • 1½ cups sifted flour
  • ¾ cup sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ¼ teaspoon salt
  • ½ cup cooking oil
  • ½ cup cold water
  • 1 jar (4¾ oz.) baby strained prunes
  • 1 egg
  • 1 teaspoon vanilla
  • ½ cup chopped nuts

Glaze

  • ½ cup powdered (confectioners') sugar
  • ⅛ teaspoon cinnamon
  • 1 tablespoon light cream

Steps

Cake

  1. Sift together the first 8 dry ingredients (flour, sugar, brown sugar, baking powder, baking soda, cinnamon, ginger, and salt).
  2. Add the cooking oil, ½ cup cold water, strained prunes, egg, and vanilla to the sifted dry ingredients.
  3. Blend until combined, then beat 1 minute at medium speed.
  4. Turn batter into a greased and floured 9×9×2-inch pan.
  5. Sprinkle chopped nuts on top.
  6. Bake at 350°F for 30 minutes.
  7. Cool in pan.

Glaze

  1. For the glaze, combine ½ cup powdered sugar, ⅛ teaspoon cinnamon, and 1 tablespoon light cream; drizzle over cooled cake.
