Ingredients
Cake
- 1½ cups sifted flour
- ¾ cup sugar
- ¼ cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon ginger
- ¼ teaspoon salt
- ½ cup cooking oil
- ½ cup cold water
- 1 jar (4¾ oz.) baby strained prunes
- 1 egg
- 1 teaspoon vanilla
- ½ cup chopped nuts
Glaze
- ½ cup powdered (confectioners') sugar
- ⅛ teaspoon cinnamon
- 1 tablespoon light cream
Steps
Cake
- Sift together the first 8 dry ingredients (flour, sugar, brown sugar, baking powder, baking soda, cinnamon, ginger, and salt).
- Add the cooking oil, ½ cup cold water, strained prunes, egg, and vanilla to the sifted dry ingredients.
- Blend until combined, then beat 1 minute at medium speed.
- Turn batter into a greased and floured 9×9×2-inch pan.
- Sprinkle chopped nuts on top.
- Bake at 350°F for 30 minutes.
- Cool in pan.
Glaze
- For the glaze, combine ½ cup powdered sugar, ⅛ teaspoon cinnamon, and 1 tablespoon light cream; drizzle over cooled cake.
