Ingredients
- 1 envelope unflavored gelatin
- 1/3 cup cold water
- 3/4 cup canned pumpkin
- 1 cup packed brown sugar (divided: 1/2 cup for pumpkin mixture, remainder for cream cheese mixture)
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 2 eggs, separated
- 1/3 cup granulated sugar
- 1 (3-oz) package Philadelphia Brand cream cheese, softened
- 1 cup Breakstone's sour cream
- 1 teaspoon vanilla
- 1/3 cup chopped pecans
Steps
- Soften gelatin in cold water; stir over low heat until dissolved.
- Add pumpkin, 1/2 cup of the brown sugar, pumpkin pie spice, salt, and egg yolks. Cook, stirring constantly, over medium heat until thoroughly heated. Remove from heat and cool.
- Beat egg whites until foamy; gradually add the granulated sugar, beating until stiff peaks form.
- Fold beaten egg whites into the cooled pumpkin mixture.
- In a separate bowl, combine cream cheese and the remaining brown sugar, mixing until well blended. Stir in sour cream and vanilla.
- Alternate layers of sour cream mixture, chopped pecans, and pumpkin mixture in parfait glasses.
- Chill until set before serving.
