Summer Meat Loaf

Ingredients
- 2 pounds chopped (ground) beef
- ½ pint dairy sour cream
- 1 egg
- 3 tablespoons chives
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/16 teaspoon pepper
- 2 hard-cooked eggs, peeled
Steps
- In a large bowl, mix the ground beef with the sour cream, egg, and chives. Season with thyme, salt, and pepper; mix well.
- Shape half of the meat mixture into a loaf in a shallow baking pan.
- Place the two hard-cooked eggs lengthwise in the center of the loaf.
- Cover with the remaining meat mixture, pressing it around the eggs and forming a complete loaf shape.
- Bake at 350°F for one hour. The loaf requires no basting.
- Serve hot or cold.
