Ingredients

  • 2¾–3¼ cups all-purpose flour, divided
  • 1 package yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1¼ cups warm water
  • 2 tablespoons shortening
  • cornmeal, for dusting

Steps

  1. Combine the yeast, sugar, salt, and half of the flour in a large bowl.
  2. Add the warm water and shortening; stir to combine.
  3. Add the remaining flour gradually, mixing until the dough is firm.
  4. Knead the dough until smooth and elastic.
  5. Place the dough in a greased bowl and turn it to coat the top with grease.
  6. Cover and let rise for 60 minutes.
  7. Punch the dough down.
  8. Roll out the dough to about ¼-inch thickness. Cut with a round cutter.
  9. Dust the surface or griddle with cornmeal. Let the cut muffins rise for 30 minutes.
  10. Cook on a griddle for 8 minutes per side.
