Carmel Frosting

Ingredients

  • ½ cup sugar (for caramelizing)
  • 2½ cups sugar
  • ¾ cup milk
  • 1 egg
  • Pinch of salt
  • ½ cup butter, cut up

Steps

  1. Place ½ cup sugar in a heavy saucepan over medium heat. Cook, stirring, until the sugar melts and turns golden brown.
  2. In a bowl, combine 2½ cups sugar, ¾ cup milk, 1 egg, and a pinch of salt.
  3. Add ½ cup butter (cut into pieces) to the sugar-milk mixture, then pour the whole mixture into the saucepan with the caramelized sugar. (The mixture will be lumpy at first.)
  4. Cook, stirring frequently, until the mixture reaches the soft-ball stage (approximately 15–20 minutes).
  5. Remove from heat and cool for 5 minutes.
  6. Beat until the frosting reaches a spreadable consistency.
  7. Be sure the cake is completely cool before frosting.
