Ingredients

  • ½ cup light brown sugar, packed
  • ½ cup softened butter or margarine
  • 2 eggs
  • 1 teaspoon vanilla
  • 1½ cups flour, unsifted
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ cup chopped raisins
  • 1½ cups finely grated carrots
  • ½ cup walnuts, finely chopped

Steps

  1. Preheat oven to 350°F.
  2. Grease a 9 × 13-inch pan.
  3. Mix the brown sugar and butter (or margarine) together.
  4. Add the eggs and vanilla and beat well.
  5. Stir in the dry ingredients (flour, salt, baking soda, and baking powder).
  6. Add the raisins and carrots; stir to combine.
  7. Spread the mixture into the prepared baking pan.
  8. Sprinkle the chopped walnuts over the top.
  9. Bake for about 40 minutes.
  10. Cool, then cut into squares.
