Ingredients

  • Some potatoes (writer used 3 not very large), unpeeled, scrubbed
  • Salt and pepper, to taste
  • Slices of ham or Canadian bacon (writer used fresh pork)
  • Some apples, unpeeled, cored
  • Light brown sugar, to taste
  • A few pats of butter
  • ½ cup water

Steps

  1. Scrub potatoes but do not peel (note: writer says she did peel them). Slice about ⅛" thick and layer in a skillet or frying pan with a tight-fitting lid.
  2. Season potatoes with salt and pepper.
  3. Cover potatoes with slices of ham or Canadian bacon (writer used fresh pork).
  4. Core apples but do not peel. Slice about ½" thick and make a layer on top of the meat.
  5. Sprinkle light brown sugar over the apple layer.
  6. Add a few pats of butter on top.
  7. Add ½ cup water to the skillet.
  8. Cover and cook on the stovetop on low heat for ½ to ¾ hour (writer cooked 1 hour on low and did not remove the lid).
  9. Serve directly in the skillet. Can make 2 or 3 layers if desired.
  10. Writer notes: "Very satisfying & for biscuits." Serve with biscuits.
