Ingredients
Cake
- 1 cup quick-cooking oatmeal
- ¼ stick (2 tablespoons) margarine (oleo)
- 1¼ cups boiling water
- 2 eggs, well beaten
- 1 cup white sugar
- 1 cup brown sugar
- 1½ cups flour
- 1 teaspoon baking soda
- ¾ teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
Icing
- 6 tablespoons melted margarine (oleo)
- 1 cup brown sugar
- ⅓ cup Carnation evaporated milk
- ½ teaspoon vanilla
- 1 cup coconut
- ½ cup nut meats
Steps
Cake
- Combine the oatmeal, margarine, and boiling water; mix together and let cool.
- Once cooled, mix in the well-beaten eggs, white sugar, brown sugar, flour, baking soda, cinnamon, nutmeg, and salt.
- Grease a large pan and pour in the batter.
- Bake at 350°F for 30 minutes.
- Remove from oven and loosen the cake all the way around the sides.
- Make punctures all over the top of the cake.
Icing
- Make the icing: Cook together the melted margarine, brown sugar, evaporated milk, vanilla, coconut, and nut meats just enough to melt the sugar.
- Pour the icing over the punctured cake.
- Return to oven and bake 15 minutes more.
