Ingredients
Topping / Pan Base
- ⅓ cup butter
- 1 cup dark brown sugar
- 2 tablespoons pineapple juice
- 8 slices pineapple
- 8 red cherries
Batter
- 1½ cups flour
- 3 teaspoons baking powder
- ½ cup sugar
- 2 eggs
- 1 teaspoon vanilla
- ¼ teaspoon almond extract
- ½ cup milk
- 3 tablespoons fat (melted)
Steps
Topping / Pan Base
- In a frying pan, heat slowly the butter, dark brown sugar, and pineapple juice together, stirring until combined.
- Add the pineapple slices and red cherries to the pan; arrange them in the pan bottom.
Batter
- In a bowl, combine the flour, baking powder, sugar, eggs, vanilla, almond extract, milk, and melted fat. Beat for 2 minutes.
- Pour the batter over the pineapple and cherry arrangement in the pan.
- Bake 35 minutes in a moderate oven (approximately 350°F).
