Ingredients

  • 2 cups flour
  • 1 cup oats (uncooked, old fashioned)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup pumpkin
  • 1 cup margarine (oleo)
  • Chocolate chips / nuts / raisins (amount to taste)

Steps

  1. Preheat oven to 350°.
  2. Cream the margarine, then add both sugars, egg, and vanilla. Mix well.
  3. Add the dry ingredients (flour, oats, baking soda, cinnamon, salt) and beat well. Stir in pumpkin and any mix-ins (chocolate chips, nuts, and/or raisins).
  4. Drop ¼ cup of dough per cookie onto a greased cookie sheet. Spread each portion into a pumpkin shape, adding a little extra dough at the top for the stem.
  5. Decorate as desired.
  6. Bake at 350° for 20–25 minutes. Makes 19–20 cookies.
