Ingredients
- 3 beaten eggs
- ½ cup cooking oil
- ½ cup milk
- 2½ cups sifted all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 2 cups shredded carrot
- 1 (3½ oz) can (1½ cups) flaked coconut
- ½ cup snipped maraschino cherries
- ½ cup raisins
- ½ cup pecans
Steps
- Combine beaten eggs, oil, and milk in a bowl; set aside.
- In a large bowl, sift together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- Add the egg mixture to the dry ingredients. Mix just until thoroughly combined.
- Stir in the shredded carrot, coconut, cherries, raisins, and pecans.
- Turn batter into 4 well-greased and floured 16 oz fruit or vegetable cans.
- Bake at 350°F for 45–50 minutes.
