Ingredients

  • 3 beaten eggs
  • ½ cup cooking oil
  • ½ cup milk
  • 2½ cups sifted all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 cups shredded carrot
  • 1 (3½ oz) can (1½ cups) flaked coconut
  • ½ cup snipped maraschino cherries
  • ½ cup raisins
  • ½ cup pecans

Steps

  1. Combine beaten eggs, oil, and milk in a bowl; set aside.
  2. In a large bowl, sift together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Add the egg mixture to the dry ingredients. Mix just until thoroughly combined.
  4. Stir in the shredded carrot, coconut, cherries, raisins, and pecans.
  5. Turn batter into 4 well-greased and floured 16 oz fruit or vegetable cans.
  6. Bake at 350°F for 45–50 minutes.
  7. Remove from cans and cool. Wrap and refrigerate. (Note: the back of the card ends here; any further storage instructions are not recorded.)
